Today’s the Day to Make This Snow Day Soup
This winter has been less than spectacular so days like this are perfect to have a warm pot of homemade soup simmering on the stove. After I wrote about my friend Nancy's frolics in the supermarket parking lot which was mobbed because of the impending doom of a snow storm, she calmed down enough to share this with me, which she allowed me to share with you.
It's called Nancy's Cold Busting Sausage Soup
She actually didn't have a name for it, but I thought that was pretty darn good for my first attempt at naming soup. It's not like "how to name your soup" is something that's easy to google. OK, fine, I actually didn't try to google that, I thought that would be ridiculous, so I just named it myself.
Ingredients: Hot sausage small or large pkg depends on how much meat you want. *if you don't like hot use regular sausage.
2 pkgs of sliced mushrooms
2-3 celery sticks
4-5 garlic cloves
Crushed Cayenne pepper (optional)
2 18oz cans of chicken broth (might need a little more)
1 can of organic black beans
1 can of organic red beans
1 can of organic garbanzo beans (chick peas)
Bag of Chopped Kale
-Take sausage out of casings, use a deep large pot, fry sausage in olive oil. Break up the sausage as it cooks
-chop all ingredients and add to sausage as you chop.
-once all is chopped and in pot, cook for about 10-15 minutes until tender.
-add chicken broth
-add cans of beans
-add desired amount of lentils (I add about 1/2 to 3/4 cup)
-use spices to desired taste.
-cook for at least 1 hour, the longer you let it simmer the better it is!
-20 minutes before you serve, break off of kale from stems and add to soup, add the whole bag if you can, it melts down to nothing.
