What is Kielbasa? It's a big sausage that is traditionally made out of ground pork meat and spices. Kielbasa hails from Eastern European countries, but is mainly associated with the country that introduced it to the world in the 1800's - Poland. Sausage is a staple of Polish cuisine, and Kielbasa is King.

If you want some of the best, traditional kielbasa in Connecticut, there are a few Kielbasa kings around the state. Most have been making their recipes for close to, or over, 100 years. Pork is typically the main ingredient in kielbasa, but variations include beef, chicken, lamb, turkey, or veal. The most frequent spices in kielbasa are salt, pepper, garlic, and marjoram. The links are then most often smoked, and then down they go.

Whenever my Uncle comes up to Connecticut, he goes to New Britain to stock up on his Polish food. New Britain's Little Poland neighborhood is the place in Connecticut for anything Polish, but there are Kielbasa Masters all over the state, here are a few of my favorites.
